Easy Breakfast Potatoes

These crispy breakfast potatoes are perfectly golden and crunchy on the outside, tender and fluffy on the inside, and simple to prepare in either the oven or a skillet. Made with just a handful of pantry staples and a few easy crisping tips, they’re an ideal side dish for breakfast or brunch.

Easy Breakfast Potatoes

Ingredients

6 servings
  • potatoes — 2 lb (diced)
  • black pepper — 0.25 tsp
  • Salt — 1 tsp
  • paprika — 0.50 tsp
  • garlic powder — 0.50 tsp
  • onion powder — 0.50 tsp
  • Fresh parsley — 1 tbsp (minced)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet.
  2. Peel and dice the potatoes, then pat them dry.
  3. Toss the potatoes with olive oil and seasonings.
  4. Spread them evenly on the baking sheet and bake for 20–23 minutes.
  5. Stir, then broil for 4–5 minutes until crispy.
  6. Garnish with parsley and serve.

Notes

Store any leftover potatoes in an airtight container in the fridge for up to 4-5 days. Re-crisp in oven or air fryer at 400°F for 10 minutes. You can also use a hot skillet. Avoid microwaving – it softens the texture.
