Bang Bang Salmon Bites

Ingredients

4 servings
  • fresh salmon — 1 lb (skinless and cut into bite-sized cubes)
  • garlic powder — 1 tsp
  • smoked paprika — 1 tsp
  • Salt — 0.50 tsp
  • Panko breadcrumbs — 1 cup
  • olive oil — 1 tbsp
  • mayonnaise — 0.50 cup
  • sweet chili sauce — 2 tbsp
  • sriracha — 1 tbsp
  • sriracha — 1 tsp (optional)

Instructions

  1. Toss salmon cubes with garlic powder, paprika, salt, and pepper in a bowl until evenly coated.
  2. Gently press each salmon piece into the panko breadcrumbs until well-coated. Spray lightly with olive oil.
  3. Place salmon on a parchment-lined baking tray. Bake for 12–14 minutes or until golden and crispy; or cook in batches at 390°F for 8–10 minutes, flipping halfway for even crisping using an air fryer.
  4. To make the sauce, in a small bowl, whisk together mayo, sweet chili sauce, sriracha, lime juice, and honey until smooth.
  5. Assemble the salmon cubes with sauce in a bowl of warm rice.
