Ingredients

4 servings
  • quinoa — 1 cup
  • filtered water — 2 cup
  • soy milk — 2 cup (can be replaced with cow's milk)
  • ground ginger — 0.50 tsp
  • Ground cinnamon — 0.50 tsp
  • Honey — 0.25 cup (or brown rice syrup)

Instructions

  1. Combine the water and quinoa in a small saucepan and bring to a gentle boil. Lower the heat and let it simmer, stirring occasionally, until the quinoa is tender and creamy, about 20 minutes. Add a splash of water if needed to keep it smooth.
  2. As the quinoa finishes cooking, gently warm the soy milk with the ginger and cinnamon in a separate saucepan over low heat, allowing the flavors to bloom.
  3. Spoon the quinoa into serving bowls, pour the warm spiced milk over the top, and finish with a drizzle of honey or brown rice syrup for a cozy, comforting bowl.
