Cream of Asparagus

Ingredients

4 servings
  • ghee — 1 tsp
  • Asparagus — 0.50 lb (trimmed and cut into 1/2-inch pieces)
  • Fennel — 1 tsp (chopped)
  • vegetable stock — 2 cup
  • filtered water — 1 cup
  • organic cream — 2 tbsp

Instructions

  1. Heat the ghee in a large saucepan over medium-high heat. Add the asparagus and fennel and cook for 4–5 minutes.
  2. Add the stock and water. Bring to a boil, then lower the heat and simmer for 10–12 minutes.
  3. Blend the soup with the cream until smooth. Return it to the pan, warm gently, and season with salt and pepper.
  4. Ladle into bowls, garnish with parsley or toasted almonds, and serve hot.
