pesto — 4 tbsp
roasted red peppers — 2 oz
large tomato — 1 piece (sliced)
fresh mozzarella cheese — 4 slice
Instructions
Spread the pesto evenly on all slices of bread.
Place two slices of bread on a panini maker or in a toaster oven and heat for about 2 minutes.
Top with mozzarella, tomatoes, and roasted red peppers, and let the cheese begin to melt.
Place the remaining bread slices on top to form sandwiches, then close the panini maker and cook for 2–3 minutes.
