Crisp Potato Patties

Crisp potato patties are golden and crunchy on the outside with a soft, fluffy center that makes them irresistible. Made from seasoned mashed potatoes and pan-fried to perfection, they’re a simple yet satisfying dish that works well as a snack, side, or breakfast favorite. Perfectly crisp and comforting, they’re a classic crowd-pleaser.

Crisp Potato Patties

Ingredients

4 servings
  • potatoes — 1 lb (peeled and cubed)
  • unsalted butter — 1 cup (room temperature)
  • Fresh parsley — 2 tbsp (finely chopped)
  • Salt to taste — 0.50 cup
  • shelled sunflower seeds — 0.50 cup (partially ground)

Instructions

  1. Boil the potatoes in a large pot of water until fork-tender, about 30 minutes. Drain and let them sit for 2 minutes to release excess moisture.
  2. Transfer the potatoes to a bowl and mash until smooth.
  3. Mix in the butter, parsley, salt, and pepper. Set aside.
  4. Combine the rice flour and sunflower seeds. Spread the mixture on a clean surface. Divide the potatoes into 6 portions, flatten each into a ½-inch-thick square, and coat both sides with the seed mixture.
  5. Heat ghee or oil in a nonstick skillet over medium heat. Fry the patties until golden brown, about 2–3 minutes per side.
  6. Drain briefly on paper towels and serve hot.

Notes

You can also substitute sweet potato for a sweeter option. Enjoy!
